Eddie Brook:
Eddie Brook grew up regenerating rainforest on his family farm in the hinterland of Byron Bay, where the Distillery now lies. From this upbringing, he acquired a passion for native
Australian rainforest fruits and flavours. “The rainforest that my family has regenerated over the past 30 years is the ideal pantry for making great spirits. Like any good dish, a great Gin
should be balanced and it is exciting to showcase these incredible native flavours.” With more than 10 years of experience in the spirit industry and 15 years in the food industry, Eddie has been trained in the art of distillation and mentored by Jim McEwan. Cape Byron Distillery was born in November 2016. Today Eddie is CEO of Cape Byron Distillery, he leads a team comprising Distillation, Warehousing and Production, Sales (Domestic and Export), Marketing, Events, Product Development and a Cellar Door.

Maria Collyer:
Maria Collyer is a Business Adviser in the Northern Rivers Region, servicing SMEs with comprehensive Business Evaluations under the government funded Entrepreneurs Programme.
She is a multi-awarded food entrepreneur and branding expert as the founder and majority owner of Sweden’s largest juice bar chain, Naked Juicebar. She has experience from many
stages of business- and operational development, with key skills in streamlining systems and processes to support continuous growth. Maria has also featured as jury member for leading Scandinavian business plan competitions and as guest speaker at European Food Service Summit. Her own business journey has fueled a passion for entrepreneurship and business, a passion she is thrilled to share with fellow entrepreneurs in the Northern Rivers Region.
